Ingredients
  • 2 cloves garlic, chopped
  • 3 tablespoons (45 ml) olive oil
  • 1/2 lb (225 g) spinach
  • slices country bread
  • 1/4 cup (60 ml) mascarpone cheese
  • 2 sweet Italian or Toulouse sausages, cooked and sliced
  • 4 large slices cheese, Gré des champs or Comté (about 200 g)
  • Salt and pepper
  • Preparation
  • With the rack in the highest position, preheat the oven’s broiler.
  • In a skillet, soften garlic in half the oil. Add spinach and cook, stirring, until just wilted. Season with salt and pepper. Press into a sieve to drain well.
  • Place bread slices on a baking sheet and brush with remaining oil. Turn slices of bread and spread with mascarpone. Layer with spinach mixture and sausages. Cover with cheese.
  • Broil for about 5 minutes or until cheese is melted and bread begins to toast.
