Ingredients
  • 1/2 cup (125 ml) ground almonds
  • 1/2 cup (125 ml) sugar
  • 1 tablespoon (15 ml) unbleached all-purpose flour
  • 1/4 cup (60 ml) grated carrot
  • 1/4 cup (60 ml) orange juice
  • 2 tablespoons (30 ml) unsalted butter, melted
  • Grated zest of 1 orange
  • Preparation
  • With the rack in the middle of oven, preheat the oven to 180 ° C (350 ° F). Line a baking sheet with a silicone mat (Silpat) or non-stick aluminum foil.
  • In a bowl, combine the ground almonds, sugar and flour. Add the remaining ingredients and blend well.
  • On the baking sheet, scoop 15 ml (1 tablespoon) of batter per cookie. Only three cookies per sheet. With the back of a spoon, spread each cookie into a 7.5-cm (3-inch) in diameter disc. Bake for about 12 minutes or until lightly browned. Rotate the baking sheet halfway through baking for even browning. Remove from the oven, let cool for about 2 minutes, then, with a thin spatula, place each cookie on an upside-down glass to form cups, pressing lightly with your fingers. To make cigarettes, wrap each cookie around the handle of a wooden spoon. Cool and unmould.
  • Serve as is. You can stuff the cigarettes with whipped cream or serve with a scoop of ice cream, topped with a drizzle of honey.
