  • 1 pie crust, baked
  • Preparation
  • In a bowl, sprinkle the gelatin over the cold water. Set aside.
  • Cut the passion fruit in half. Remove the pulp and seeds with a spoon. In a sieve, press the seeds to extract the juice. Keep the juice and discard the seeds.
  • In a double boiler, warm the passion fruit juice, orange juice, 60 ml (1/4 cup) of sugar, and butter. Stir until the butter has melted.
  • In a bowl, beat the 3 eggs and 3 egg yolks with the remaining sugar until light and fluffy. Stir in one third of the warm passion fruit mixture.
  • Pour the egg mixture into the pan. Stir until it thickens slightly. Remove from the heat.
  • Dissolve the gelatin in the microwave oven and add to the juice and egg mixture. Stir to combine.
  • Let cool for 5 minutes before pouring into the crust. Refrigerate for 4 hours.
  • Beat the egg whites until soft peaks form. Add the additional sugar, beating until stiff peaks form. Spread on the pie and brown under the hot broiler.
