Ingredients
  • 3 cups (750 ml) cubed slightly stale country bread
  • 3 tomatoes, sliced
  • 2 green onions, thinly sliced diagonally
  • 1 stalk celery, diced
  • 1/4 cup (60 ml) coarsely chopped celery leaves
  • 2 tablespoons (30 ml) chopped fresh basil
  • 1 teaspoon (5 ml) chopped fresh oregano
  • 2 tablespoons (30 ml) toasted pine nuts
  • 2 tablespoons (30 ml) red wine vinegar
  • 3 tablespoons (45 ml) olive oil
  • sal and pepper
  • Preparation
  • In a bowl, cover bread with cold water and let soak for about 2 minutes. Squeeze the bread gently with your hands.
  • In bowl, combine the bread with the remaining ingredients. Season with salt and pepper. Refrigerate.
