3 cups (750 ml) cubed slightly stale country bread
3 tomatoes, sliced
2 green onions, thinly sliced diagonally
1 stalk celery, diced
1/4 cup (60 ml) coarsely chopped celery leaves
2 tablespoons (30 ml) chopped fresh basil
1 teaspoon (5 ml) chopped fresh oregano
2 tablespoons (30 ml) toasted pine nuts
2 tablespoons (30 ml) red wine vinegar
3 tablespoons (45 ml) olive oil
sal and pepper
Preparation
In a bowl, cover bread with cold water and let soak for about 2 minutes. Squeeze the bread gently with your hands.
In bowl, combine the bread with the remaining ingredients. Season with salt and pepper. Refrigerate.
