Ingredients
  • 1 chicken, about 4 lb (2 kg)
  • 2 to 3 carrots, peeled
  • 2 to 3 medium onions, peeled
  • 2 medium tomatoes
  • 4 cloves garlic, peeled
  • 1 leek
  • 2 cloves
  • 2 bay leaves
  • 1 crust Parmesan cheese (optional)
  • Water
  • Salt and pepper
  • Preparation
  • In a large pot, place all ingredients and cover with water. Season with salt and pepper. Bring to a boil.
  • Skim, if desired. Simmer over low heat for about 2 hours or until chicken is fork tender. Strain broth.
