Ingredients
  • 1 vanilla bean
  • 2 cups (500 ml) water
  • 1 cup (250 ml) sugar
  • Juice of 1 lemon
  • 8 peaches, halved and pitted
  • Preparation
  • Cut the vanilla bean in half lengthwise. With the tip of a knife, remove the seeds. Set aside.
  • In a saucepan, bring the water to a boil with the sugar, lemon juice, and vanilla pod and seeds. Add the peaches and simmer for about 5 minutes or until the peaches are tender. Remove the peel, if desired. Let cool. Cover and refrigerate until completely chilled.
