3/4 lb (350 g) cooked shrimp, shelled and deveined
3/4 lb (350 g) fresh or frozen snow crab meat
1 cucumber, peeled, seeded and diced
1 carrot, cut into julienne
1 pomelo cut into skinless segments, halved
2 tablespoons (30 ml) pomelo juice
2 tablespoons (30 ml) fresh cilantro, chopped
2 tablespoons (30 ml) mayonnaise
1/2 jalapeño pepper, seeded and finely chopped
1/2 teaspoon (2.5 ml) paprika
1/4 cup (60 ml) roasted peanuts, crushed
Salt and pepper
Preparation
Cut the shrimp in half horizontally. Set aside.
In a large bowl, combine the shrimp, crab, cucumber, carrot, pomelo, pomelo juice, cilantro, jalapeño, and paprika. Add the mayonnaise and stir to combine. Season with salt and pepper.
Sprinkle with the peanuts and serve. Better at room temperature.
