Ingredients
  • 3/4 lb (350 g) cooked shrimp, shelled and deveined
  • 3/4 lb (350 g) fresh or frozen snow crab meat
  • 1 cucumber, peeled, seeded and diced
  • 1 carrot, cut into julienne
  • 1 pomelo cut into skinless segments, halved
  • 2 tablespoons (30 ml) pomelo juice
  • 2 tablespoons (30 ml) fresh cilantro, chopped
  • 2 tablespoons (30 ml) mayonnaise
  • 1/2 jalapeño pepper, seeded and finely chopped
  • 1/2 teaspoon (2.5 ml) paprika
  • 1/4 cup (60 ml) roasted peanuts, crushed
  • Salt and pepper
  • Preparation
  • Cut the shrimp in half horizontally. Set aside.
  • In a large bowl, combine the shrimp, crab, cucumber, carrot, pomelo, pomelo juice, cilantro, jalapeño, and paprika. Add the mayonnaise and stir to combine. Season with salt and pepper.
  • Sprinkle with the peanuts and serve. Better at room temperature.
