In a pot over medium heat, cook the onion and garlic in the butter until golden, stirring often, about 10 minutes.
Add both broths and bring to a boil. Whisk in the toasted flour and let simmer for 3 to 5 minutes or until the gravy thickens. Season with salt and pepper. Strain through a sieve.
Serve with spiced roast chicken (see recipe), turkey, red meat or poutine!
