Ingredients
  • 250 g puff pastry, thawed, cold
  • 7 1/2-inch (1-cm) thick fresh pineapple slices
  • 1/4 cup (60 ml) brown sugar
  • 1/4 cup (60 ml) apricot jam or jelly, warm
  • Preparation
  • With the rack in the lower position, preheat the oven to 200 °C (400 °F).
  • On a floured work surface, roll out the dough to get a 25-cm (10-inch) square. Place the dough on a baking sheet.
  • Cut the pineapple slices in half and remove the core. Place on the dough by slightly overlapping them, side by side on two rows. Sprinkle with the brown sugar. Bake for about 20 minutes. If any air pocket forms on the dough during baking, burst it with a fork.
  • Right out of the oven, brush the pineapple with jelly. If desired, brown the pie under the hot broiler for a few minutes.
