Ingredients
  • 1 shallot, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) butter
  • 1 tablespoon (15 ml) honey
  • 1/2 cup (125 ml) red wine
  • 1 cup (250 ml) demi-glace
  • 1 teaspoon (5 ml) mixed peppercorns, ground
  • 1/4 teaspoon (1 ml) star anise, ground
  • Salt and pepper
  • Preparation
  • In a skillet, sauté the shallot and garlic in the oil, butter, and honey. Deglaze with the wine and reduce for 1 minute. Add the demi-glace, pepper, and star anise. Simmer for 1 minute. Adjust the seasoning.
  • Serve with grilled steak.
