1 small butternut squash, peeled, seeded and thinly sliced (about 3 cups)
1 onion, thinly sliced
2 tbsp (30 ml) olive oil
Salt and pepper
Preparation
With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
On the prepared baking sheet, combine the squash, onion and oil. Season with salt and pepper. Bake for about 20 minutes or until the squash is tender. Delicious as a side to grilled meat and poultry or cold in a sandwich.
