Ingredients
  • 1 small butternut squash, peeled, seeded and thinly sliced (about 3 cups)
  • 1 onion, thinly sliced
  • 2 tbsp (30 ml) olive oil
  • Salt and pepper
  • Preparation
  • With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • On the prepared baking sheet, combine the squash, onion and oil. Season with salt and pepper. Bake for about 20 minutes or until the squash is tender. Delicious as a side to grilled meat and poultry or cold in a sandwich.
