2 green onions, finely chopped

2 tablespoons (30 ml) chopped flat-leaf parsley

1 clove garlic, finely chopped

1/4 Scotch bonnet pepper

Grated zest of 1 lime

1/2 teaspoon (2.5 ml) salt

1/4 cup (60 ml) boiling water

2 tablespoons (30 ml) lime juice

2 tablespoons (30 ml) olive oil

In a bowl, combine the onions, parsley, garlic, Scotch bonnet, lime zest and salt. Add the boiling water and let stand for 5 minutes.

Add the lime juice and oil. Blend well.
