Ingredients
  • 1 1/2 cups (375 ml) unbleached all-purpose flour
  • 1 1/2 teaspoons (7.5 ml) baking powder
  • 1/4 teaspoon (1 ml) salt
  • 1 egg
  • 1 egg yolk
  • 3/4 cup (180 ml) sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 cup (125 ml) unsalted butter, softened
  • Coarse sugar, for garnish (optional)
  • Preparation
  • In a bowl, combine the flour, baking powder and salt. Set aside.
  • In another bowl, beat the eggs, sugar and vanilla until light and fluffy. Add the butter and dry ingredients and stir until the batter is smooth. With your hands, shape into a disc and cover with plastic wrap. Refrigerate for at least 1 hour.
  • With the rack in the middle position, preheat the oven to 170 °C (325 °F). Line two baking sheets with parchment paper.
