In another bowl, beat the eggs, sugar and vanilla until light and fluffy. Add the butter and dry ingredients and stir until the batter is smooth. With your hands, shape into a disc and cover with plastic wrap. Refrigerate for at least 1 hour.
With the rack in the middle position, preheat the oven to 170 °C (325 °F). Line two baking sheets with parchment paper.
