Ingredients
  • 2 onions, chopped
  • 3 cloves garlic, finely chopped
  • 1/4 cup (60 ml) olive oil
  • 2 cups (500 ml) chicken broth
  • 2 tomatoes, chopped
  • 1 tortilla, cut into strips
  • 1/4 cup (60 ml) raisins
  • 1/4 cup (60 ml) pumpkin seeds
  • 1/4 cup (60 ml) ground almonds
  • 1 1/2 tablespoons (22 ml) chili powder
  • 1 tablespoon (15 ml) paprika
  • 2 tablespoons (30 ml) sesame seeds
  • 1/2 teaspoon (2.5 ml) salt
  • 1/4 teaspoon (1 ml) ground cinnamon
  • 1/4 teaspoon (1 ml) ground cloves
  • 1/4 teaspoon (1 ml) ground coriander seeds
  • 1 pinch Cayenne pepper, ground
  • 1/4 cup (60 ml) cocoa powder
  • 2 tablespoons (30 ml) honey
  • Preparation
  • In a saucepan, lightly brown the onions and garlic in the oil. Add the chicken broth and tomatoes.
  • Cover and simmer for 5 minutes.
  • In a skillet, sauté the remaining ingredients, except for the cocoa powder and honey, for a few minutes.
  • Add the sauteed ingredients, cocoa powder and honey to the onion mixture.
  • Bring to a boil. Cover, reduce the heat and simmer gently for 5 minutes. Purée in a blender. Coat chicken or turkey with this sauce. Any leftovers freeze perfectly.
