  • 2 carrots, peeled and cut into chunks
  • 2 stalks celery, cut into chunks
  • 2 onions, quartered
  • 2 cloves garlic, peeled
  • 1 red apple, cored and cut into wedges
  • 8 cups (2 litres) chicken broth
  • 1 can 19 oz (540 ml) plum tomatoes
  • 1 cup (250 ml) dried fava beans
  • Preparation
  • In a slow cooker, combine all the ingredients. Cover and cook on low for 8 hours or until the beans are tender.
  • In a blender, purée the soup until smooth. Strain, if desired. Season with salt and pepper. Garnish with sour cream and savory leaves.
