Slow Cooker Vegetable and Lima Bean Soup

Ingredients
  • 1 large onion, diced
  • 3 slices bacon, cut into small pieces
  • 1 tablespoon (15 ml) olive oil
  • 3 cloves garlic, finely chopped
  • 1 1/2 cups (375 ml) small dried lima beans
  • 1 1/2 cups (375 ml) turnips, peeled and diced (about 1 small)
  • 1 1/2 cups (375 ml) celery root, peeled and diced (about 1 small)
  • 1 1/2 cups (375 ml) sweet potato, peeled and diced (about 1 medium)
  • 3 carrots, peeled and sliced
  • 8 cups (2 litres) chicken broth (or beef broth)
  • 6 sprigs fresh thyme
  • 3 sprigs fresh oregano
  • Salt and pepper
  • Preparation
  • In a skillet, brown the onion and bacon in the oil. Add the garlic and cook for 1 minute. Pour into the slow cooker. Add the remaining ingredients and blend well. Season with salt and pepper. Cover and cook on high for about 6 hours or until the beans are tender. Remove the sprigs of herb and adjust the seasoning.
