Smoky BBQ Sauce (Kentucky)

Ingredients
  • 1 onion, finely chopped
  • 1/4 cup (60 ml) butter
  • 2 cloves garlic, finely chopped
  • 1 tablespoon (15 ml) paprika
  • 1/4 cup (60 ml) bourbon or whiskey
  • 1/4 cup (60 ml) molasses
  • 1/4 cup (60 ml) lemon juice
  • 1/2 cup (125 ml) ketchup
  • 1 cup (250 ml) tomato sauce
  • 1 teaspoon (5 ml) chipotle Tabasco, or to taste
  • Salt and pepper
  • Preparation
  • In a saucepan, brown the onion in the butter. Season with salt and pepper. Add the garlic and paprika and cook for 1 minute. Deglaze with the bourbon.
  • Add the remaining ingredients and bring to a boil. Simmer for about 15 minutes or until the sauce is syrupy. Stir frequently. Adjust the seasoning. If desired, purée the sauce until smooth in a blender.
  • Serve with spit-roasted pork, pork chops or tenderloin, or in a hamburger.
