Ingredients
1 egg yolk 1 tablespoon Dijon mustard 1 tablespoon rice vinegar 1 cup rice bran oil or vegetable oil 2 hard-cooked eggs, chopped 1 teaspoon capers, chopped 1/2 teaspoon chopped anchovies 1/2 teaspoon chopped parsley 1/2 teaspoon chopped tarragon 1/4 teaspoon salt
Preparation

Step 1 Place the egg yolk in a medium-sized bowl, then whisk in the mustard and vinegar. Slowly whisk in the oil, in a thin stream, forming an emulsion. Stir in the hard-cooked eggs, capers, anchovies, parsley, tarragon and salt. Adjust with water if too thick. Set aside. This makes 1 1/2 cups sauce.
