4 vanilla beans, split lengthwise and seeds scraped
4 slices candied ginger
4 whole cloves
2 cinnamon sticks, each about 3 inches (7.5 cm) long
1/2 cup (125 ml) dark rum or vodka
Preparation
In a small bottle, combine all the ingredients. Tightly close the bottle and shake to mix thoroughly. Infuse for 2 weeks at room temperature.
Strain through a sieve. The extract will keep for 6 months in an airtight bottle at room temperature.
