Ingredients
  • 2 2/3 lbs (1.2 kg) fresh or frozen and thawed strawberries (about 2 litres / 8 cups)
  • 4 McIntosh apples, cored and sliced
  • Sugar
  • Preparation
  • In a saucepan, cook the strawberries and apples over high heat for 10 minutes, stirring frequently.
  • In a food processor, purée the fruit until smooth. Strain and return to the same saucepan.
  • Bring to a boil and simmer gently for about 2 hours and 30 minutes, stirring frequently, until it has the texture of soft butter.
  • Sweeten to taste.
  • This butter will keep for up to two weeks in the refrigerator.
