Ingredients
  • 1 sweet potato, peeled
  • 2 tablespoons (30 ml) olive oil
  • Salt and pepper
  • Preparation
  • With the mandolin, thinly slice the potatoes lengthwise. Rinse the slices and pat dry.
  • In a large skillet over medium heat, brown the potato slices in the olive oil a dozen at a time until golden brown and crispy, adding oil as needed.
  • Drain on paper towels. Season with salt and pepper. Set aside at room temperature.
