Ingredients
  • 4 medium sweet potatoes, peeled and cut into sticks 1/4 inch (1/2 cm) thick
    • Canola oil for frying or
    • Peanut oil for frying
  • Preparation
  • Preheat the oil, setting the fryer to high.
  • Drop the sweet potato sticks into warm water and soak for at least 5 minutes. Drain well without letting them dry completely.
  • Scatter the sweet potato sticks on a baking sheet and dust with potato starch. Toss. Fry the sticks in 2 batches, until pale gold and crisp, 4 to 5 minutes.
  • Remove from the oil and drain on paper towels. Season with salt.
