Ingredients
  • 1 cup (250 ml) fine bulgur (cracked wheat)
  • 3 green onions, chopped
  • 1 cup (250 ml) fresh parsley, chopped
  • 1 1/2 cups (375 ml) seeded and diced tomatoes (about 3 tomatoes)
  • 3 tablespoons (45 ml) lemon juice
  • 1/4 cup (60 ml) olive oil
  • 2 tablespoons (30 ml) fresh mint, chopped
  • Salt and pepper
  • Preparation
  • In a bowl, place the bulgur and cover with hot water. Soak for 30 minutes. Drain in a colander. Set aside.
  • In a bowl, combine the remaining ingredients, then add the bulgur. Toss to combine. Season with salt and pepper.
  • Let rest for 2 hours before serving, if possible.
