Ingredients
  • 1 ½ cups (375 ml) sparkling mineral water
  • 2 tbsp sugar
  • 2 tsp instant dry yeast
  • 3 ½ cups (490 g) unbleached all-purpose flour
  • 1 ½ tsp salt
  • Preparation
  • In a bowl, combine the water, sugar and yeast. Let rest for 5 minutes.
  • In a large bowl using a wooden spoon, or in a stand mixer using the dough hook, combine the flour and salt. Add the yeast mixture and stir until a soft ball forms. On a lightly floured surface or in a stand mixer, knead the dough for about 5 minutes or until smooth.
  • Shape the dough into a ball and place in a lightly floured bowl. Cover with plastic wrap and let rise in a warm, humid place for about 2 hours or until the dough has doubled in volume.
