Ingredients
  • 3 cups (750 ml) fresh spinach
  • 1/2 lb (227 g) firm tofu, cut into large cubes
  • 2 green onions, cut into chunks
  • 1 clove garlic, peeled
  • 1/4 cup (60 ml) mayonnaise
  • Salt and pepper
  • Preparation
  • In a food processor, purée spinach, tofu, green onions and garlic until smooth, about 3 minutes, scraping the sides and bottom of the processor a few times. Add mayonnaise and mix thoroughly. Season with salt and pepper.
  • Serve as a spread or in a sandwich.
