Ingredients
  • 1 red bell pepper, finely chopped
  • 1 orange bell pepper, finely chopped
  • 1 yellow bell pepper, finely chopped
  • 1 onion, finely chopped
  • 1/2 cup (125 ml) cider vinegar
  • 1/2 cup (125 ml) water
  • 1/4 cup (60 ml) sugar
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon (2.5 ml) crushed red pepper or more to taste
  • Salt
  • Preparation
  • n a saucepan, bring all of the ingredients to a boil. Simmer for about 35 minutes or until the vegetables are tender and the liquid has almost completely evaporated. Season with salt. Cool and refrigerate for about 2 hours. Freeze or put into jars. Sterilize for 15 minutes in boiling water for a long shelf life.
  • Serve over grilled fish, meat or your favorite burger.
