Ingredients
  • 1 can 7 oz (198 ml) oil-packed tuna, drained
  • 1 green onion, chopped
  • 3 tablespoons (45 ml) sundried tomato pesto
  • 2 tablespoons (30 ml) mayonnaise
  • 1 tablespoon (15 ml) chopped fresh cilantro
  • 1/2 teaspoon (2.5 ml) sambal oelek
  • 4 English muffins
  • 1 cup (250 ml) arugula
  • Pepper
  • Preparation
  • In a bowl, combine the tuna, green onion, pesto, mayonnaise, cilantro, and sambal oelek with a fork. Season with pepper.
  • Spoon the tuna filling on the English muffin bottoms. Add the arugula and close with the English muffin tops.
  • In a ridged skillet or panini grill, brown the sandwiches on each side. Cut in half and serve with a green salad.
