Ingredients
  • 1/2 lb (225 g) skinless salmon fillet, very fresh, cut into small dice
  • 3 slices smoked salmon, diced
  • 1 small red onion, finely chopped
  • 1/2 pomegranate, seeds only
  • 1 green onion, chopped
  • 1 tablespoon (15 ml) capers, finely chopped
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) mayonnaise
  • 1 tablespoon (15 ml) Dijon or whole-grain mustard
  • 1 tablespoon (15 ml) crushed plain potato chips (or tempura)
  • Sea salt, to taste
  • Sriracha sauce, to taste
  • Preparation
  • In a bowl, combine all ingredients. Serve immediately in wonton spoons or roll in California maki (see recipe).
