Ingredients
  • 2 onions, finely chopped
  • 1 stalk celery, finely chopped
  • 2 tablespoons (30 ml) olive oil
  • 4 cloves garlic, finely chopped
  • 1/4 cup (60 ml) breadcrumbs
  • 4 Arctic char or salmon steaks (of the thickest part of the fillet), about 175 g each, with the skin
  • 1/4 cup (60 ml) white vermouth or white wine
  • 1/4 cup (60 ml) cold butter, cubed
  • 1/2 teaspoon (2.5 ml) celery salt
  • Pepper
  • 1 lemon, cut into wedges
  • Fresh tarragon, for garnish
  • Preparation
  • Preheat the oven to 220 °C (425 °F).
  • In a skillet, gently sauté the onions and celery in the oil for about 10 minutes. Add the garlic and breadcrumbs. Set aside.
  • Place the fish steaks, side by side, skin side down at the bottom of a baking dish.
  • Drizzle with the vermouth. Scatter the butter and onion mixture over the fish. Season with salt and pepper. Bake in the middle of the oven for about 10 minutes. Serve with lemon wedges and garnish with fresh tarragon.
