225 g (½ lb) green beans, trimmed and cut into pieces
1 onion, thinly sliced
2 cloves garlic, chopped
30 ml (2 tbsp) canola oil
250 ml (1 cup) red or yellow cherry tomatoes, halved
2 steaks halibut, cooked and broken into flakes
2 steaks haddock, cooked and broken into flakes
2 green onions, thinly sliced
60 ml (¼ cup) fresh cilantro, chopped
Salt and pepper
Preparation
In a saucepan of salted boiling water, cook the beans al dente. Set aside.
In a skillet, soften the onion and garlic in the oil. Add the tomatoes and cook until soft. Add the bean and the remaining ingredients and cook for 3 to 5 minutes or until the salad is warm. Season with salt and pepper.
