1 can (19 oz / 540 ml) white beans, rinsed and drained
1 cup (250 ml) cold Braised Beef with Onions (see recipe), fat removed and diced
1 cup (250 ml) cherry tomatoes, halved
1/2 cup (125 ml) chopped fresh parsley
1/4 cup (60 ml) olive oil
3 tbsp (45 ml) red wine vinegar
1 small clove garlic, finely chopped
Salt and pepper
In small bowl filled with cold water, soak the onion for 5 minutes. Drain and place in large bowl.
Add the remaining ingredients. Season with salt and pepper and toss well.
