Ingredients
  • 1 zucchini, cut into 1/4-inch (1/2-cm) dice
  • 1 shallot, finely chopped
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (15 ml) chopped fresh basil
  • 1 baguette, cut into 1/2-inch (1-cm) slices
  • 1/2 cup (125 ml) store-bought hummus
  • 1/4 lb (115 g) feta cheese, crumbled
  • Salt and pepper
  • Preparation
  • In a skillet, gently soften zucchini and shallot in oil, without browning. Add basil. Season with salt and pepper. Set aside in a bowl.
  • With the rack in the highest position, preheat the oven’s broiler.
  • Place bread slices on a baking sheet. Oil lightly. Broil on each side.
  • Just before serving, spread hummus on the toasted bread and cover with zucchini mixture. Sprinkle with feta cheese.
